Granddaddy Bill --- Senate Club Sandwich

Libby's Granddaddy Bill was known as a frugal and diligent gentleman who was kind to everyone he encountered, regardless of social position or other factors. Bill’s frugality and diligence made him much more likely to eat a PBJ sandwich prepared by his secretary in his law office than to have lunch out. When the General Assembly was in session, however, Bill occasionally enjoyed lunch at Chicken’s Sandwich Shop, run for years by Carlisle and Linda Bannister in the Capitol Building. In Granddaddy’s memory we include a recipe for the Senate Club Sandwich.
Ingredients:
© 3 slices white bread
© 2 leaves green leaf lettuce
© 2 slices fresh tomato
© 4 strips crispy bacon
© 3 to 4 ounces chicken salad
© 2 slices cheddar cheese
© 2 tablespoons mayonnaise
Directions:
Toast three slices of bread. Spread one side of each slice with mayonnaise.
Place one lettuce leaf, the tomato slices, a slice of cheddar and the bacon on one slice. Place a second slice of bread over these ingredients, mayo-side down.
Spread this top bread slice with mayo, add a scoop of chicken salad and place another lettuce leaf on it, topping with the remaining slice of bread. Cut the sandwich into
triangles diagonally and serve.
Libby's mom and grandmother spoke with Mrs. Carlisle in 2003. She
remarked on her grandfather's unfailing politeness and graciousness through the years.
Historical Note:
The Carlisles’ retirement from their restaurant service was honored by the Virginia General Assembly in February 2007.

Carlisle and Linda Bannister look forward to spending more time with their family,
especially with their seven wonderful grandchildren, and at the river at Windmill Point. Captain Carlisle Bannister will greatly enjoy extra time at the helm of his charter fishing boat, the "Miss Linda," and extended winter fishing trips for big rockfish.
