1980's Zesty Crock Pot Chicken and Good Night Moon Chocolate Cake

Libby's family was getting established during the 1980's and using the Crock Pot helped her mom get meals on the table after days busy with chasing the children and their friends aroung.
Zesty Crock Pot Chicken and Goodnight Moon Chocolate Cake are two Sherwood family favorites. The cake is named for one of Libby’s favorite books when she was a little girl. At bedtime, she would sometimes read her copy to her little brother.

Zesty Crock Pot Chicken

Ingredients:
© 4 each, chicken drumsticks & thighs, skinless
© chopped tomatoes (I use Pomi 750g box.)
© 1/2 cup peanut butter
© 2 large carrots, grated
© 2 large red peppers in chunks
© 1/2 red onion, chopped or sliced
© 1 small jalapeno, seeded, minced
Directions:
Mix all ingredients in 3 quart or larger Crock Pot. Cover and cook on high 4 to 5 hours, or on low for 7 to 9 hours. Carefully lift chicken (it’s fall-off-the-bone
tender) onto a bed of cooked rice or couscous. Garnish with chopped cilantro.
Goodnight Moon Chocolate Cake

Ingredients:
© 1 package chocolate cake mix
© 1 pint sour cream
© 1 small package instant chocolate pudding
© 1 small bag chocolate chips
© 3/4 cup oil
© 4 eggs
© 1 cup water
Directions:
Spray slow cooker with non-stick spray, or grease pot with Crisco. Mix all
ingredients, then pour mixture into slow cooker. Cook on low for 4 to 5 hours. Serve the cake by scooping it, still warm, into bowls. Some ice cream might be nice...
