Mama Sarah enjoys cooking, particularly piquant fare. She shares a recipe that she recently developed - Fiery Peanut Noodles.
Sarah comments, "You can use vegetables that suit your own taste in this recipe. Crunchy vegetables work best."
Ingredients:
8 ounces angel hair pasta
1/3 cup creamy peanut butter
2 tablespoons soy sauce
1½ tablespoons rice wine vinegar
2 teaspoons chile paste with garlic
½ teaspoon sugar
½ medium red bell pepper
½ medium orange bell pepper
3 scallions, sliced on the diagonal
1 tablespoon sesame seeds
2 tablespoons cilantro, chopped
Directions:
Cook pasta al dente; drain and set aside.
Combine peanut butter, ¼ cup water, soy sauce, vinegar, chile paste, and sugar in a bowl, whisking well. Thin with water until the consistency of cream. Add linguine, bell peppers, and scallions, tossing well. Sprinkle with sesame seeds and cilantro.
