Libby's Good for You! Cookies

Libby has a sweet tooth and tries to choose foods with healthful ingredients. We think that any recipe that contains flax seed, wheat germ, fruits, and walnuts must be worth the calories. Get out your mixing bowl and stir up and few of these omega-3-rich treats!
Ingredients
© 1/4 cup ground flax seed, divided
© 1/4 cup apple juice
© 1/4 cup water
© 1/4 cup canola oil
© 1/4 cup white sugar
© 1/4 cup brown sugar
© 1/2 cup dried fruits, chopped
(cranberries, apricots, blueberries, sultanas)
© 1 teaspoon vanilla extract
© 1 1/2 cup all-purpose flour
© 1/2 cup toasted wheat germ
© 1/2 teaspoon baking soda
© 1/2 teaspoon ground cinnamon
© 1/4 cup walnuts, chopped
Directions
Preheat oven to 350 degrees. Spray cookie sheet lightly with oil.
In a small bowl, combine half of the ground flax with 1/2 cup of water and set aside.
In a large bowl, combine flours, wheat germ, baking soda, remaining ground flax and spice.
To flax/water mixture, add sugar, oil, vanilla and dried fruits. Add wet ingredients to dry ingredients, stirring until just combined. Fold in nuts.
Drop large spoonfuls of cookie dough onto cookie sheet. Bake for 12 minutes. Cool for one minute on pans; then transfer to cooling rack. Let cookies cool completely before moving to an airtight container.
