Sarah Sherwood --- Hawaiian Chicken Salad

Sarah, recently prepared the following recipe for a ladies' luncheon in honor of Libby's friend Lidiya. Guests enjoyed the Hawaiian Chicken Salad tucked into bread of their choice — whole wheat pita bread, croissants, or black rye.
Ingredients:
© 12 ounces poached or grilled chicken breast meat, shredded
© 1/2 cup celery, diced
© 1 medium apple, chopped
© 1 cup pineapple chunks
© 2 tablespoons golden raisins
© 1/3 cup sweet red pepper, diced
© 2 teaspoons sesame seeds, toasted
© 5 tablespoons mayonnaise
© 1/2 teaspoon curry powder
© Lettuce leaves: Bibb, romaine, red leaf
© Breads: pita, croissants, rye
Directions:
Combine chicken, celery, apple, pineapple, raisins, red pepper, and 2/3 of the sesame seeds in a large bowl. Mix mayonnaise and curry powder. Pour the mayo over the chicken mixture. Toss to coat. Sprinkle with the remaining sesame seeds.
For a buffet: Present this salad to your guests in an attractive bowl. Offer lettuces and breads so that guests may assemble their sandwiches as they please.
We like to serve this salad with small bunches of green grapes as a garnish. Depending on your guests’ tastes, you might like to sprinkle chopped pecans or walnuts on top of the salad.
