Joyce Parkerson --- Baked Curried Fruit & Chutney Cream Cheese
Joyce Haithcock Parkerson is Rachel’s grandmother by marriage to her grandfather Bill Parkerson. Joyce, a North Carolinian by birth, has a most gracious nature and shares here her oft-requested recipe for delicious Baked Curried Fruit as well as her recipe for a quick party hors d’oeuvre, Chutney Cream Cheese.

Ingredients for Baked Curried Fruit:
© 1 cup pineapple chunks
© 1 cup sliced peaches
© 1 cup apricot halves
© 2 cups sliced pears
© 1 cup dark cherries, pitted
© 1/3 to 1/2 cup brown sugar
© 1/2 cup butter
© 1/2 cup dry sherry
© 1 tablespoon curry powder
© 2 tablespoons cornstarch
Directions:
Thoroughly drain the canned fruits. Place them in a Pyrex dish.
Melt butter, then add sugar, curry, and cornstarch. Stir until well mixed.
Spoon the sauce over fruit. Bake uncovered at 325° for 60 to 90 minutes.
Refrigerate. Reheat until warm.

Ingredients:
1 block Philadelphia Cream Cheese
1 jar Major Grey’s Chutney
Directions:
Unwrap cream cheese block and place it on an attractive dish.
Pour the chutney over the cheese, leaving some cheese showing.
Serve with Waverly Wafers (or other buttery crackers).
