Aunt Jane --- Mary Jane's Apple Delight & Mama Doris' Cornbread

Libby's Aunt Jane reaches into her mother’s collection of wonderful recipes to contribute a homestyle favorite to Libby and Ziqi’s collection. Jane notes, ”Mother used to add the chopped nuts, but I don’t.”
We’ll leave that decision up to you when you prepare Mary Jane’s Apple Delight.
Ingredients:
© 1/2 cup white sugar
© 1/2 cup brown sugar
© 1/2 cup flour
© 1/4 stick (or more) margarine
© 1 cup nuts, chopped
© 4 Granny Smith apples, sliced
Directions:
Line casserole dish with sliced apples. Sprinkle with white sugar.
Mix brown sugar and flour together, then sprinkle over white sugar.
Dot with margarine and top with nuts, if using.
Bake at 325° for 45 minutes to an hour, or until apples are soft.
Aunt Jane --- Mama Doris' Cornbread

Aunt Jane is greatly blessed to have a thoughtful, loving husband, Dick. She shares one of her mother-in-law’s satisfying recipes, Mama Doris' Cornbread.
Ingredients:
© 1 8.5 ounce box Jiffy corn muffin mix
© 3 eggs
© 1/2 cup oil
© 1/2 teaspoon salt
© 8 ounces sour cream
© 8 ounces canned creamed corn
Directions:
Mix all ingredients and put in lightly greased 13 x 9 Pyrex dish.
Bake at 350° for 35 minutes.
