Libby and Ziqi,
Hold fast to the truth that our Father is our great provider. “Behold the fowls of the air: for they sow not, neither do they reap, nor gather in barns; yet your heavenly Father feedth them. Are ye not much better than they?” (Matthew 6:26)
This recipe for Scripture Cake is from Queen of Appalachia Cook Book, written over 100 years ago. While the original recipe gives the yield as one loaf, it can be used to make two loaves.
Ingredients:
© 1 cup Judges 5:25 (butter)
© 2 cups Jeremiah 6:20 (sugar)
© 6 tablespoons 1st Samuel 14:25 (honey)
© 6 Jeremiah 21:11 (eggs)
© 3 1/2 cups 1st Kings 4:22 (flour)
© 2 teaspoons Amos 4:5 (baking powder)
© 1 pinch Leviticus 2:13 (salt)
© Chronicles 9:9
{1/2 tsp. cinnamon, 1/4 tsp. each: cloves, ginger, nutmeg}
© 1 cup Judges 4:19 (milk)
© 2 cups Nahum 3:12 (figs, chopped, dried)
© 2 cups 1st Samuel 30:12 (raisins)
© 2 cups Numbers 17:8 (almonds, chopped)
Directions:
In a large bowl, mix butter, and sugar, and honey. Add eggs one at a time, beating well with each egg.
In a separate bowl, sift together 3 cups of the flour, plus the spices, salt, and baking powder. Combine with the creamed mixture alternately with the milk, starting and ending with flour.
The figs, raisins, and almonds should be saturated in the remaining flour and then mixed into the batter. Spoon the batter into greased and floured 9” x 5” pans.
Bake in a preheated 350° oven for 1 1/2 hours. Cool first in the pan, the pull and cook the loaves on a rack.
On Scripture:
The grass withers, the flower fades, But the word of our God stands forever. (Isaiah 40:8)
