Jeannette & Emory --- Tomato Aspic

Cousin Emory (also known as Boo or Boodie) and his wife, Jeannette contribute Big Bop’s recipe for Easy Tomato Aspic. She says, “This was Bop’s recipe, which I loved. Emory and I had dinner with Big Daddy and Bop nearly every Saturday in 1957. This recipe was always a wonderful addition to the meal!"
Ingredients:
© 1 small box lemon Jell-O
© 2 cups tomato juice
© 1 tablespoon vinegar
Directions:
Stir and dissolve Jell-O in one cup hot tomato juice. Add one cup of cold juice. Add vinegar. Refrigerate at least 4 hours, until set.
Jeannette --- Curry Chicken-Cheese Ball

Jeannette shares another favorite recipe that she has often used while entertaining — Curry-Chicken-Cheese Ball.
Ingredients:
© 1 5-ounce can boned chicken (I use Swanson’s.)
© 1 8-ounce block of cream cheese, softened
© 2/3 cup mayonnaise
© 1/4 teaspoon salt
© 1 teaspoon curry powder
© 1 package slivered almonds
Directions:
Toast almonds. Mix all ingredients and form a ball. Mixture may be soft. You can use Saran Wrap to help form the mixture. Refrigerate. When ready to serve, sprinkle with chopped parsley. Serve with crackers of your choice.
