Vicki Scobell --- Best Ever Banana Muffins

Vicki Scobell is a close friend of Libby's family. . She would like to share her recipe for Best Ever Banana Muffins. Vicki found this recipe in the Cleveland Plain Dealer newspaper sometime in the 1980's.
Ingredients:
3 large bananas
3/4 cup white or raw sugar
1 egg
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups all purpose flour (You can use 3/4 cup unbleached white and 3/4 cup whole wheat.)
1/3 cup melted butter (I use olive oil instead or unsweetened applesauce - much healthier.)
Directions:
Mash bananas.
Add sugar and slightly beaten egg.
Add the melted butter (or oil).
Add the dry ingredients and bake in a 375° oven for 20 minutes. (Use muffin liners to make cleaning up easier.)
