Great Granddaddy --- Coffee Ice Cream

Libby's great-grandfather Bill, was a kind, quiet man with a precious sense of humor. He was especially adept at plays on words. He would amuse his granddaughter Sarah while the two of them waited for Grandmother Kathleen to finish shopping. For example, on a trek to purchase flowers for the garden of which Kathleen was quite proud, Granddaddy would tease that they were off to select “chrysanthe-minimums” and “nasty-turtiums!”
Great-grandfather Bill was a bank examiner who always managed to get a round of golf in with his friends on Saturdays when the weather permitted. He was also known for his enjoyment of a small bowl of his favorite flavor ice cream before he and Kathleen watched The Lawrence Welk Show. So… a-one and a-two, turn on the bubble machine while you try out the following recipe for Coffee Ice Cream! As Lawrence would say, it’s “wunnerful, wunnerful!”
Ingredients:
© 3 cups light cream
© 1¾ cups sugar
© 3 eggs, beaten
© ½ teaspoon salt
© 1 tablespoon espresso beans, finely ground
© ¾ cup coffee, chilled
© 1 cup whipping cream
© 1½ teaspoons vanilla extract
Directions:
Scald the light cream, then add the sugar. Stir it until the sugar iscompletely dissolved. In a double boiler, add the eggs to the cream and mix well. Cook until the mixture thickens, then remove from the heat and chill. Once chilled, add the coffee, coffee powder, whipping cream and salt.
Add the entire mixture to your ice cream maker. Do not add the vanilla, until the mixture is almost frozen!
